What does “one cup” mean before you measure coffee?
Measure the water first. A “cup” on the side of a coffee maker may be far smaller than the mug in your hand. Cuisinart’s grinding guide, meanwhile, defines each brewer cup as 5 fluid ounces, or 147.9 mL.
Fill your usual mug to the level at which you actually drink it, pour that water into a graduated jug, and write down the milliliters. For an automatic machine, measure the water that goes into the reservoir and check its manual. A carafe marked “4” could hold only 20 fluid ounces under Cuisinart’s five-ounce convention, less than three household cups.

How does instant coffee dosing differ from ground coffee?
Ground coffee and instant coffee are different products, so their spoon counts are not interchangeable. Use the instant jar’s own instruction because granule density and intended strength vary by product. Add the stated amount to the known mug volume, dissolve it, taste, then move by half a teaspoon. There is no grind, drawdown, or spent bed to correct.
Which grind, temperature, time, and spoon habits change the taste?
Dose controls concentration, while grind, contact time, and temperature govern extraction. Confusing those jobs leads to the familiar remedy of adding another spoon whenever a cup tastes thin. Extra coffee can make the next cup stronger while leaving the original extraction fault untouched.
The SCA protocol recommends water at the point of contact with coffee at 200°F ±5°F, also printed as 94°C ±2°C. Its contact-time ranges are 1–4 minutes for fine grinds, 4–6 minutes for drip, and 6–8 minutes for coarse grinds. Those are broad brewing practices rather than commands for every cone, press, or batch size.
At my desk today, frost is still holding in the shade at midday; where the sun reaches, it is almost mild. A cold ceramic dripper and mug take heat from the brew, which is precisely why the SCA figure concerns water where it meets coffee. Preheat cold equipment with hot water, discard that water, then brew. The kettle display alone does not describe the coffee bed.
Finer particles expose more area and usually slow water through a filter; coarser particles expose less and usually let it pass faster. A 2024 study by Masaaki Habara and Toshihide Horiguchi found that finer grind significantly affected total dissolved solids and extraction in full-immersion coffee. The spoon can disguise a dose error as a brewing fault. A packed or heaped measure raises the mass and may make the drink stronger; an airy, partly filled one lowers it. Level the same measuring spoon each time before blaming temperature or grind.
“Sour means under-extracted” and “bitter means over-extracted” are useful suspicions, not verdicts. Acidity may belong to the bean and roast. Bitterness may survive every sensible timing change in a dark roast. Pair taste with evidence from the brew: an unexpectedly fast drawdown, a stalled filter, water outside the recommended range, or a changed bag.
What should you change when the cup tastes wrong?
Change one control in the next brew. Keep a pleasant flavor and alter dose only when you want a different concentration. Keep dose fixed and alter grind or time when the flavor itself is sharp, hollow, drying, or harsh.

For the cup already made, add measured hot water if it is simply too concentrated. Begin with 1 tablespoon, stir, and taste. Milk can soften the impression of strength, though it prevents you from learning the water dilution that worked. If the cup is unpleasant because extraction went wrong, set it aside and repair the recipe next time. More grounds cannot rescue a finished brew.
Do not change dose, grind, water temperature, and brew time together. You may make a better cup and still have no idea which move earned it.
When is a digital scale worth using?
A scale becomes worthwhile as soon as you want the same cup from a second bag. The 1.5-to-2.1 g range calculated for one level teaspoon is wide enough that 6½ spoons can differ by about 3.5 g. At the SCA ratio, 3.5 g is the central dose for nearly 64 mL of water. Spoon arithmetic has reached its limit there.
I prefer a scale reading to 0.1 g, especially for a single cup. Put the brewer on it, tare, add coffee, tare again, then add the intended water mass. For everyday brewing, many people treat 1 g of water as approximately 1 mL; if you need metrology rather than breakfast, water density changes with temperature and that shortcut has limits.
Translate a cup you already like rather than submitting to someone else’s “perfect” ratio. If 13 g of coffee with 236.6 mL of water tastes right, the personal ratio is 236.6 ÷ 13, or 1:18.2. A 300 mL mug at that same ratio takes 16.5 g. The reusable formula is:

How do you keep a brew log that preserves the cup you like?
Printed recipes tell me what an age published. Marginal notes tell me what somebody repeatedly cooked. - Taste after the drink has cooled a little. Write one observation and one proposed change for the next brew.
